Graphene-based artificial tongue achieves near-human-like sense of taste – New Study

A team of researchers report in the Proceedings of the National Academy of Sciences on a new graphene-based sensor design that, through machine learning, was able to develop a near-human sense of taste. This device is the first of its kind to operate in a moist environment, better approximating the conditions inside the human mouth.

Summary

Researchers have created a novel graphene-based sensor that mimics human taste, reported in the Proceedings of the National Academy of Sciences. This innovative device utilizes machine learning to analyze data from the graphene sensors, achieving taste recognition capabilities approaching human accuracy. A key breakthrough is its ability to function effectively in moist environments, similar to the inside of a mouth, a challenge that previous taste sensors have struggled with. This advancement opens possibilities for developing more realistic and reliable taste-testing applications in food science, pharmaceuticals, and other industries.
